Blueberry Scones

Blueberry Scones

  • 2 cups flour, plus additional flour for kneading
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup blueberries (fresh or frozen)
  • 1 cup heavy cream
  • 1 egg
  • 1 ½ tsp vanilla
  • Sugar topping
  • Cream
  • 2 tablespoons sugar (raw/coarse sugar gives a nice crunch if you have it)


  • 1. Preheat oven to 425 degrees F.
  • 2. Combine flour, sugar, baking powder and salt in a large mixing bowl. Mix with a fork.
  • 3. Add blueberries and toss in the flour mix
  • 4. Mix together the cream egg and vanilla, add to the flour mix and combine with fork until dough just comes together
  • 5. Using hand, knead the sticky dough in the bowl, turning and pressing the dough to incorporate the flour.
  • 6. Turn the dough out on a lightly floured surface and form into a thick disc about 8 inches in diameter. Cut the disc into 8 wedges and place on a baking sheet lined with parchment paper
  • 7. Paint the tops of the scones with some cream then sprinkle with the course sugar.
  • Bake 15 – 18 minutes, or until scones are golden brown
