Carrot, Cabbage and Apple Salad

Carrot, Cabbage and Apple Salad
Into the fall, more varieties of apples become available and taste great accompanied by other veggies. This is a refreshing salad perfect as a side dish to any fall meal! A larger quantity of the veggies can also be chopped and set aside in the fridge for a quick, easy side dish throughout the week.
 
What you need:
  • Two bowls (one larger bowl for the salad, one smaller bowl for the dressing)
  • knife & cutting board  
  • vegetable slicer or grater
  • salad tongs
  • spoon (to mix dressing)
Ingredients:
  • 1 cup each of purple cabbage, green cabbage, carrots, and apples, grated or thinly sliced
  • 1/2 cup raisins or other (local) dried fruit
  • 1/2 cup walnuts, chopped
  • dressing: 1 cup plain yogurt, 1 tbsp honey, and 2 tbsp lemon juice
Directions:
  1. Chop or grate the cabbages, carrots, and apples.
  2. Mix them in a bowl and sprinkle with some lemon juice (to stop the apple from browning).
  3. Add raisins and walnuts - more can be added if desired.
  4. Toss salad with dressing just before serving.
