Chocolate Chip Pumpkin Squares

Your typical jack-o-lantern is a bit to large and stringy for baking. Try sugar pumpkins which are small and sweet, with dark orange-colored flesh. They're perfect for desserts. 

If you are not sure how to make pumpkin or squash puree, read this article for three ways to transform your pumpkin into puree. You can freeze your pureed squashes and save them for delicious desserts like these.

Ingredients:

  • 2 ¼ cup All-purpose flour
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp baking soda
  • 4 eggs
  • 2 cup sugar pumpkin purée
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • ½ cup vegetable oil
  • 1 cup chocolate chips

Directions:

  1. In large bowl, whisk together flour, baking powder, cinnamon, nutmeg and baking soda.
  2. In separate bowl, beat eggs until well mixed and foamy. Stir in pumpkin, sugars and oil.
  3. Pour over flour mixture; sprinkle with chocolate chips. Stir just until batter is smooth.
  4. Pour batter into greased 13×9 inch baking dish; smooth top.
  5. Bake at 325F for 45 minutes.
