Delicata Squash Fries

You can make fries out of all kinds of squash. A staff favourite is Delicata fries.

They have a sweet orange flesh that seems to caramalize during roasting, and you can eat the skin! All squash skins are edible, not all are tasty. While delicata's are considered a winter squash, they belong to the summer squash family which includes zucchini and pattypans, other squashes with tasty edible skins.

These delicata fries are also quite tasty stuffed into a black bean taco, which is exactly how these Delicata fries were discovered. They tasted so good, they never made it inside the taco.


  • 1 delicata squash
  • olive oil (or coconut oil)
  • chili powder


  1. Slice delicata squash in half lengthwise and scoop out the seeds. Slice each half into 1/4" peices.
  2. Toss slices with olive oil, salt and chili powder.
  3. Roast at 375 for 20 minutes, turn them after 10 minutes.
