Glorious Green Salad

Here is a salad inspired by the beautiful salad mixes from farm market vendors, Glorious Organics, that appeared in the Georgia Straight (July 17, 2013).

Ingredients:

  • 1 small bunch of parsley
  • 1 small bunch of cilantro
  • 1 small bunch of mint
  • 3 cloves garlic
  • juice of 1 lemon
  • ½ cup (125 mL) extra-virgin olive oil
  • salt and crushed chili flakes to taste
  • 12 oz (340 g) Neufchâtel cheese, or chèvre
  • 8 oz (230 g) Glorious Organics “Celebration” salad mix, or other mixed salad greens
  • 1/4 cup (60 mL) organic hemp seeds
  • edible flowers (examples include marigold, calendula, bachelor button, rose, dianthus, flowering herbs) for garnish

Directions:

Chimichurri Dressing:

  1. Remove the stems from the parsley, cilantro, and mint and chop finely.
  2. Mince the garlic and place with herbs in a small bowl.
  3. Add lemon juice and oil; mix together.
  4. Season with salt and chili flakes.
  5. Allow dressing to rest for 30 minutes.

Prepare the Salad:

  1. Using two tablespoons, scoop and form the cheese into 12 almond-shaped portions of about 1 oz (28 grams) each.
  2. In a large bowl, toss the salad greens with desired amount of dressing. Divide salad among four large plates or six appetizer plates. Divide the cheese among the plates, arranging around each salad.
  3. Sprinkle hemp seeds and flowers over top.
