Recipe courtesy of Blue Comet Seafoods. Blue Comet Seafoods is a family run business with skippers Tony and Sasha. Tony has fished for over 35 years and is still gillnetting aboard his freezer boat the “Blue Comet”. Sasha has been fishing for over 23 years and presently fishes aboard his boat the “Sleepless Nights”, a 40 ft gillnetter.

You can find Tony and Sasha at the Vancouver Farmers' Markets, where they have been vendors for nine years!


  • 1 1/2 lbs. salmon fillet, skinned and cubed 1″ (2.5 cm)
  • 1/3 cup sundried tomatoes in oil, sliced thinly
  • 1 Tbsp oil from sundried tomatoes
  • 2 garlic cloves, minced
  • 1 cup mushrooms, sliced
  • 1/2 bunch asparagus, cut into 1″ (2.5 cm) pieces
  • 1/2 cup sliced green onion
  • 1/4 cup chopped parsley
  • 1 lbs. penne pasta
  • salt and freshly ground pepper, to taste


  1. Prepare pasta according to package directions.
  2. Meanwhile, prepare the sauce:
  3. Heat a large non-stick skillet over medium-high heat; add sundried tomatoes, oil and garlic,and saute for 1 minute. Add the mushrooms and asparagus and cook, stirring often, for 2–3 minutes.
  4. Add salmon and green onions; saute another 5–7 minutes.
  5. Stir in parsley and add salt and pepper to taste.
  6. Serve over hot pasta.
