Strawberry Pie

— compliments of Sussex County Strawberry Farms


  • 1 – 9 inch baked pie shell
  • 4 cups fresh strawberries
  • 3/4 – 1 cup sugar
  • 3 tablespoons cornstarch
  • 3/4 cup water
  • Whipping Cream (optional)


  1. Arrange half of strawberries in pie shell.
  2. Mash remaining berries and mix with sugar in medium saucepan. Place saucepan over medium heat and bring to boil – stirring frequently.
  3. In a small bowl whisk together cornstarch and water. Gradually stir in cornstarch mixture into boiling strawberry mixture. Reduce heat and simmer mixture until thickened - about 10 minutes, stirring constantly.
  4. Pour mixture over berries in pastry shell. Chill for several hours before serving.
  5. If desired, whip cream and serve each slice with a dollop.
