Strawberry Pie

Ingredients:
- 1 – 9 inch baked pie shell
- 4 cups fresh strawberries
- 3/4 – 1 cup sugar
- 3 tablespoons cornstarch
- 3/4 cup water
- Whipping Cream (optional)
Directions:
- Arrange half of strawberries in pie shell.
- Mash remaining berries and mix with sugar in medium saucepan.
Place saucepan over medium heat and bring to boil – stirring frequently.
- In a small bowl whisk together cornstarch and water. Gradually stir in cornstarch mixture into boiling strawberry
mixture. Reduce heat and simmer mixture until thickened - about 10 minutes, stirring constantly.
- Pour mixture over berries in pastry shell. Chill for several hours before serving.
- If desired, whip cream and serve each slice with a dollop.
